Sour Cream Coffee Cake

So Grandma must have LOVED coffee cake because I have over 10 recipes I will eventually be trying! I thought I’d start off with a classic, and personally my favorite kind of coffee cake. This has your traditional cinnamon sugar flavoring and is SUPER moist.

Ingredients (Cake):

  • 1/4 lb of butter (aka 1 stick)
  • 1 Cup of sugar
  • 2 eggs
  • 1 Cup of sour cream
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/4 teaspoon of vanilla
  • 1 Cup of flour

Ingredients: (Filling)

  • 1/4 Cup of sugar
  • 1 teaspoon of cinnamon

Instructions:

  1. Cream the butter and sugar together in the mixer on medium-high speed for at least 2 minutes or until smooth/fluffy
  2. Add eggs 1 at a time and beat well (should be smooth/creamy)
  3. Add sour cream and mix until uniform
  4. In a separate bowl, sift together four, baking powder and baking soda
  5. Slowly add in the flour mixture to the wet ingredients, adding a little at a time and then mixing until uniform before adding more
  6. Add vanilla and mix for a final time
  7. Grease and flour a bundt pan (THIS IS IMPORTANT) — if you are not using a bundt pan I would still recommend this step for easy cake removal
  8. Mix together the two filling ingredients
  9. Pour 1/2 of the batter into the pan and then sprinkle 1/2 of the filling mixture on top
  10. Pour the remaining batter into the pan and then sprinkle the remaining filling mixture on top
  11. Bake at 350 for 45 minutes
  12. Once you take the cake out of the oven give it time to cool off almost completely so it’s easier to get out of the pan
  13. Sprinkle powdered sugar on top!

So last week James and I went to a COVID friendly brunch with our best friends. It was nice to feel normal and since there was only four of us, of course, I over cooked. My best friend put me in charge of sweet and she was in charge of savory and man we killed it.

This cake was one of two things I made for the event. It’s simple, easy and looks like I put a lot more effort in than I did! (Aka – in my mind it’s the perfect thing to bring over!) I also brought over doughnuts, because who doesn’t like those?!

Because of how simple this was it made me wonder how many times Grandma might have made this when she needed to bring something to a social gathering. My dad always talks about how my grandparents were big hosts and would have gatherings all the time or go to a social event. I can imagine there were some days Grandma needed a quick and easy thing to bring over and I totally think she probably chose something like this.

    Mmmm, I cannot WAIT to try this! A coffee cake without nuts is the one for me.
