Everyone has their classic favorite food. Pizza, fried chicken, spaghetti, tacos I bet you could name 50 others. Mine is lasagna. Actually my dad and I both LOVE lasagna; my family always jokes about how my father and I have the same taste buds. All of my favorite food seems to be his and it has never failed! So you can imagine my excitement when I found Grandma’s recipe . . .
Ingredients:
- 1 lb of ground meat (I used venison)
- Oil
- 2 cloves of minced garlic
- 1 Cup of diced tomatoes
- 1 Cup of tomato sauce
- 1 and a 1/4 teaspoon of salt
- 1/4 teaspoon of oregano
- 1/4 teaspoon of pepper
- 1/2 a box of lasagna noodles
- 1 bag of shredded mozzarella cheese
- 1 container of cottage cheese
Instructions:
- Preheat oven to 375 F
- Brown the meat in a large skillet with oil, drain excess liquid once browned and then add garlic, tomato sauce, diced tomatoes, oregano, salt, and pepper. Mix and let simmer
- Cook noodles to liking and drain
- in a glass roasting pan lay down a thin layer of meat sauce, follow this with a layer of noodles topped with cottage cheese and mozzarella
- Repeat the same layering method (meat sauce, noodles, cottage cheese, mozzarella) until you have no meat sauce left.
- Top completely assembled lasagna with mozzarella cheese
- Place in 375 F oven for 20 minutes or until bubbly and cheese is melted.

Alright people! There is a reason one of dad’s favorite food is lasagna. Grandma’s lasagna is classic and simple. Yes just like all lasagna it does take some assembly but in my opinion it’s the perfect week night meal. I’ve preached about this before, and let’s be real I have no kids yet so please take my opinion with a grain of salt, but we all need to make time for slower nights. Slower nights where you’re in the kitchen just listening to your home. Listen to your husband talk about his day, or try and teach the dog stay. Listen to your dishwasher and refrigerator run and realize how lucky you are. Listen to your sister on the phone while you assemble dinner. Take in the fact that you might actually have a sliver of that life that the Hallmark company is always advertising. Just decide to leave the kitchen light on and listen. You might be pleasantly surprised.
Lovely write up about slowing down dinner and ‘listening’ to your home. Great advice!
