Aunt Ann’s Baked Chicken Superb!

Winter in Michigan is cold and grey and extenuates the need for good heart warming comfort food. While my grandma only spent a short time here in the mitten, she was always a midwestern lady. Residing mostly in Wisconsin and frequenting Minnesota to visit Aunt Ann, Grandma Bev was familiar with the cold. Thankfully her and Aunt Ann knew how important it was to collect recipes to combat it.

Ingredients:

  • 3-4 boneless skinless chicken breasts
  • 2 Cups of your choice of stuffing coarsely crushed
  • 1/4 Cup of white wine
  • 1 can (10.5oz) of cream of chicken soup
  • Thin sliced swiss cheese
  • 5 Tablespoons of melted butter

Instructions:

  1. Preheat the oven to 350 F
  2. Take your chicken out of the packaging, rinse off and pat dry. Then place in an un-greased glass roasting pan then placed the swiss cheese slices on top of each breast
  3. Mix together the wine and cream of chicken soup and then gently pour/spoon over your chicken
  4. Combine the melted butter and crushed stuffing and then spoon over the chicken
  5. Bake in the oven, covered, for 50-55 minutes
  6. Take out, let cool for 5 minutes and then serve!

Yes, that is right folks, Great Great Aunt Ann is already back in the blog! I have a firm belief since starting this that a text message exchange between friends now a days is the equivalent to letters and recipes back then. If I’m right it once again proves how close these two were.

This is a simple assemble and forget it recipe for those nights where its too cold to do anything but stay under a blanket. Does that happen to anyone else? James and I are blessed with a comfortable life that we worked hard to obtain and our home is well heated. But when the temperature drops below 25F you can forget about me wanting to do just about anything! Thankfully Grandma Bev and Great Great Aunt Ann also lived in this kind of weather and I kid you not a good 50-60% of the recipes Grandma collected from Ann were “stick to your rib”, gravy, comfort food recipes and they all look worth keeping the kitchen light on for.
