Me, my mother and my sister LOVE chocolate. The richer the better. Dad on the other hand always prefer to be on the lighter side of things when it comes to our beloved cocoa bean. When I originally got my hands on Grandma’s (Dad’s mom) recipes it dawned on me why my Dad might have such a light sweet tooth. She has all of 3 rich chocolate recipes. That’s it! I confronted my Dad with this knowledge and you know what he told me?
Grandma LOVED chocolate. She kept a large (foot long) chocolate bar in the fridge and would snack on it whenever she wanted to! So Grandma, this one is for you.

Ingredients (Cake):
- 1/2 Cup (1 stick) of butter
- 1 Cup of cake flour
- 1/2 Cup of unsweetened cocoa powder
- 1 of baking powder
- 1/8 teaspoon of salt
- 6 eggs
- 1 Cup of sugar
- 2 teaspoons of vanilla extract
Ingredients (Frosting):
- 6 Tablespoons of softened margarine
- 2/3 Cup of cocoa powder (I used unsweetened again)
- 2 Cups of powdered sugar
- Enough milk to get the consistency you wish
Instructions:
- Preheat oven to 350 F and grease and flour two 8″ round cake pans
- Melt the butter and place to the side for now
- Sift the flour, cocoa, baking powder, and salt together 3 times and set aside
- Place the eggs and sugar in a large heatproof bowl and set over a pan of hot water (aka a bain-marie if you don’t know what this is check out my pastry project!). With an electric mixer beat until the mixture doubles in volume and is thick enough to leave a ribbon trail when the beaters are lifted (this takes about 10 minutes). Add the vanilla now.
- Sift the dry ingredients into the wet mixture in 3 batches folding in carefully each time (it is important that you fold in or else all of that wonderful air that you just whipped in will escape and you will be left with dense brick like cake)
- Fold in the butter
- Divide the batter between the two pre-floured cake pans and bake for 25 minutes. Once done let cool. Don’t remove the cakes until they are completely cooled
- For the frosting put all ingredients in a mixer and mix at high speed until uniform.
- Assemble your cake and you are ready! Grandma noted she put raspberries or strawberries on top and I did as well!
May I just say, for someone with only 3 rich chocolate recipes in Grandma has phenomenal taste. For those of you that do not know I never got the chance to meet my grandmother so this was an intimate recipe for me. I always thought I got my love of chocolate from my mother’s side because my dad never had a craving for it like my sister and I did. However I think now, Grandma might have been in a house of people that didn’t like this sweet treat as much as she did. So I leave the kitchen light on for her tonight, as I sit here eating her cake, writing her recipes, and thinking that maybe I should also start putting a brick of chocolate in my freezer for a snack.
