Rosemary and Garlic Cast Iron Steak

You have not eaten steak until you have had a cast iron steak. Seriously guys. I have been blessed with a man that loves to grill and is good at grilling. He takes pride in it too! To the point where when I pulled out steak James was disappointed, no he was upset I wasn’t going to let him grill it. Thankfully once he had a bite, he not only forgave me, but said he wants steak this way again. Its now a dish James asks for weekly!

Ingredients:

  • Ribeye steak (1.5-3lbs)
  • 1 stick of butter
  • 2 cloves of minced garlic
  • Salt (enough to cover the entire steak in a plastic bag)
  • Pepper to taste
  • 2 Tablespoons of dried rosemary OR 2 sprigs of fresh

Instructions:

  1. Take steak out of the packaging. Rinse and pat dry and place in a plastic bag. Completely cover your steak with salt (preferably kosher) and let sit at room temperature for 2-3 hours (if you are in a hurry you can get away with 1 hour)
  2. Take steak out of salt and rinse excess off in the sink and pat steak dry.
  3. Heat your skillet to medium high heat and melt your stick of butter
  4. Sear your steak on one side while adding salt, pepper and half of your garlic and rosemary to the side facing up. (An easy way to tell if something is seared properly with a cast iron: if its hard to flip over it is not done yet, once something is properly seared it will not stick to the pan at all)
  5. Flip the steak over and sear on the other side while once again seasoning the side facing upward
  6. Let the steak cook in the pan consistently flipping it every 2-3 minutes or so to make sure it is cooked evenly. Use a spoon and wash the steak in the rosemary, butter, garlic juices as well.
  7. Using a meat thermometer make sure the inside of your steak is 140 F for medium rare cook.
  8. Once internal temperature is reached take your steak off heat and let sit for 5 minutes. Then cut up and serve

This was the perfect New Year’s Eve dinner. James and I had a wonderful date night just the two of us and let’s be honest there is nothing that says date night like a good red, juicy steak and supple red wine to go with it. This is yet again a perfect example of how food brings people together. Whether it’s a husband and wife that haven’t gotten the chance to pray over their dinner and talk in a while, or an entire family enjoying their meal in front of a movie. Good food brings good company. Yet another reason we should all leave the kitchen light on.
