Oh potatoes. . .if I hadn’t have met James I swear I think potatoes could’ve been the love of my life. This super easy and quick recipe is the perfect side for when you’re lazy, but not lazy enough to give up on sides all together. Crunchy, buttery, and warm; it’s the perfect companion for what ever you have decided to have for dinner tonight!
Ingredients (potatoes):
- 5 medium potatoes, peeled and cooked
- 3 Tablespoons of melted butter
- 1/2 C of bread crumbs
Ingredients (herb butter):
- 1/2 stick of butter melted
- 1 Tablespoon of minced garlic
- salt and pepper to taste
- 1 teaspoon of thyme
Instructions:
- Peel and boil potatoes until slightly soft. Remove from water and pat dry
- Dip potatoes in butter and roll them in crumbs. Salt and pepper for taste .
- Place in a shallow pan and bake uncovered for 20 minutes at 400
- Remove potatoes from oven and let cool for 5 minutes.
- Take the 1/2 stick of melted butter, garlic, salt, pepper, and thyme and mix together to form a suspension. Pour over the potatoes and serve immediately
Quick and easy, this recipe is nothing life changing but if you are getting bored of preparing potatoes the same way over and over again its a pretty great way to mix things up! The fun thing about this recipe is that there is room for improvement! Personally I think some cheddar cheese melted on top would be the perfect finish. How interesting! I have never prepared potatoes like this. Might have to try it. (And for the record, I totally agree: James > potatoes.
